Apple Parsnip Soup

This soup will keep you smiling on the inside and out, all the way through the long, dreary days of March.  Stock up on parsnips, my friends!  You and your family will lick the bowl clean!


Ingredients

  • 4
    small yellow oninons, diced
  • 6
    medium sized parsnips, peeled and diced
  • 4
    medium apples (any variety), peeled, cored and diced
  • 4 Tablespoons
    extra virgin olive oil
  • 4 Tablespoons
    unsalted butter
  • 2
    bay leaves
  • 1 Teaspoon
    sage (dried)
  • 8 Cups
    chicken or vegetable stock
  • to taste -
    salt & pepper

Instructions

  1. Peel, core and dice your onion, apple and parsnip.
    Saute the onion, parsnip and apple with the oil and butter over med heat.

  2. Stir in sage and bay leaves, and then add stock and bring to a boil until the parsnips are tender (you can easily spear with a fork). Remove the bay leaves and puree with an immersion blender.

  3. Serve with crumbled bacon and crusty bread. ENJOY!
