Savory Corn Muffins

These hearty, cheesy, rich, delicious muffins are a treat for breakfast with a steaming hot latte in hand; they are a perfect compliment to a fresh, cold salad for lunch or dinner, and they are an all around easy, wholesome, filling, hearty, way to start or end your day.  Warning: this is a my-runaway-kitchen sized recipe.  Cut it in half if you want a normal amount of normal sized muffins!


Ingredients

  • 4 Cups
    all purpose flour
  • 3 Cups
    cornmeal
  • 2 Cups
    sugar
  • 6 Tablespoons
    baking powder
  • 1 Tablespoon
    salt
  • 6
    large eggs
  • 1/2 cup plus 4 Tablespoons
    vegetable oil
  • 2 Cups
    milk
  • 1 Cup
    grated gruyere
  • 2 Cups
    grated cheddar
  • 2
    bunches scallions (green onions), chopped
  • 1.5 Pound
    bacon, baked to a crisp and chopped
  • about 2 Teaspoons
    smoked paprika, to sprinkle on top
  • salt & pepper, to sprinkle on top

Instructions

  1. Pre-heat oven to 400 degrees, while you are grating your cheese and chopping your green onions. You may need to bake your bacon in that oven while it's pre-heating, if you don't have any already baked and chopped from a previous cooking adventure!

  2. Mix all of the dry ingredients together (flour, cornmeal, sugar, baking powder and salt). In a separate bowl, mix wet ingredients together (egg, vegetable oil and milk) and whisk. Add the wet ingredients to the dry ingredients.

  3. Stir add-ins (cheese, onions and bacon) into your muffin mix.

  4. Scoop into greased muffin tins. Top with a sprinkle of kosher salt, freshly ground pepper and smoked paprika. Using smoked, instead of regular, paprika adds a big flavor component that moves this muffin from good to great. I highly recommend it.

    I use giant tins. You can use normal sized tins! And you can use cupcake papers if you prefer that to washing muffin pans.

  5. Bake for about 20-25 minutes, 15-20 if you are using smaller tins. Just keep an eye on them and remove them when their tops have puffed up and a toothpick inserted into the center comes out clean. Let them cool before you try to remove from muffin pans. Serve with butter and enjoy!

      Thanks for the added details– mine are so foggy because I was so little! I had no idea that Captain John had a laser, or that you learned to sail out there! How awesome.
