Chocolate Cherry Flaxseed Muffins

These “muffins” have no flour, no oil, and no added sugar, and yet they are good enough to have for dessert.  Try me.  These are good for your heart, your soul, your waistline, your muscles, your organs, your cells, your scale– and they’re just darn good.


Ingredients

  • 2 Cups
    rolled oats
  • 2 Cups
    flaxseed meal (ground flaxseed)
  • 4 Teaspoons
    baking powder
  • 1/2 Teaspoon
    salt
  • 1 Cup
    dark chocolate chips
  • 1 Cup
    walnuts
  • 2 Cups
    dried tart cherries
  • 4
    large eggs
  • 1 Cup
    applesauce
  • 1 Cup
    greek yogurt (plain or vanilla flavor)
  • 1 Teaspoon
    vanilla

Instructions

  1. Preheat oven to 350 degrees. Spray muffin tins with non-stick cooking spray.

  2. Blend the oatmeal, flaxseed meal, baking powder and salt. Then stir in chocolate chips, walnuts and cherries.

  3. Whisk together the eggs, applesauce, yogurt and vanilla.

  4. Mix wet and dry ingredients together and scoop mixture into muffin tins. They won't rise very much, so fill them almost all the way to the top.

  5. Bake at 350 for about 25-30 minutes, or until they spring back when touched and feel firm. Enjoy!
