Peanut Butter Chocolate Chip Protein Cookies

These “cookies” are PACKED with plant-based protein and have no added sugar and no flour!  They are great long-run fuel, perfect with a banana and a glass of milk after a tough workout (instead of a shake), and will keep you full throughout the afternoon slump at work!


Ingredients

  • 2
    large eggs
  • 1 1/2 Cup
    creamy peanut butter
  • 1 Cup
    slivered almonds
  • 1/2 Cup
    flax seed
  • 1/2 Cup
    almond flour, finely ground
  • 4 scoops
    chocolate protein powder
  • 2 Teaspoons
    almond extract
  • 1 Cup
    mini chocolate chips

Instructions

  1. Preheat oven to 375. Line cookie sheets with parchment paper.

  2. Combine the eggs, peanut butter and almond extract in one bowl.

  3. Combine the slivered almonds, flax seed, almond flour, protein powder and mini chips in another bowl.

  4. Combine the wet and dry ingredients and mix until well blended.

  5. Scoop golf-ball sized balls onto cookie sheet and flatten with a spatula or the bottom of a glass. Sometimes, it helps to spray the spatula or glass-bottom with cooking spray to prevent sticking, but it's not critical.

  6. Bake at 375 degrees for about 15-20 minutes, or until you can smell the toasted flavor of the nuts and the cookies change color just slightly. Allow to cool and enjoy!
